Imagine a tasty taco, but made into a pasta salad, well this is it!
Beef Taco Pasta Salad
Prep: 10 minutes plus chilling
Cook: 10 minutes
Serves: 1
3/4 cup Our Family® Rigatoni
1 teaspoon Our Family® 100% Pure Olive Oil
2 tablespoons Our Family® Real Mayonnaise
1 tablespoon chopped fresh cilantro
1 tablespoon fresh lime juice
1/2 cup chopped romaine lettuce
1/2 cup Taco-Spiced Ground Beef
1/3 cup cherry tomatoes
2 tablespoons shredded cheddar cheese
2 tablespoons sliced black olives
1. Prepare rigatoni as label directs; drain. Transfer rigatoni to large bowl; add oil and toss. Refrigerate rigatoni 30 minutes or until cool.
2. In small bowl, stir mayonnaise, cilantro and lime juice; add to rigatoni and toss. Fold in lettuce, beef, tomatoes, cheese and olives. Makes about 2 cups salad.
