Cheesy chorizo quesadillas are great as an easy weeknight meal and reheated leftovers are perfect for lunch the next day!
Chorizo Egg Quesadilla Hack

Serves: 4
1/4 pound ground chorizo sausage
4 Martin’s Large Eggs
1/4 teaspoon Our Family® Salt
1/4 teaspoon Our Family® Pure Ground Black Pepper
1 tablespoon Our Family® 100% Pure Olive Oil
1/2 cup Shredded Monterey Jack Cheese
1/2 cup Shredded Sharp Cheddar Cheese
1 (10-inch) burrito size flour tortilla
1/4 cup Our Family® Medium Thick & Chunky Salsa or Restaurant Style Salsa
sour cream, chopped red onion, chopped jalapeño pepper, and/or sliced green onions for garnish (optional)
1. In large, nonstick skillet, cook chorizo over medium-high heat 5 minutes or until browned, breaking up chorizo with side of spoon. With slotted spoon, transfer chorizo to paper towel-lined plate. Wipe out skillet.
2. In medium bowl, whisk eggs, salt and pepper. In same skillet, heat oil over medium heat. Add egg mixture and sprinkle with cheeses; top with tortilla and cook 3 minutes or until eggs are golden brown and cooked through. Flip tortilla, egg side up; top 1 side of quesadilla with chorizo and salsa. Fold tortilla in half over filling; cook 1 minute or until heated through, turning once.
3. Cut quesadilla into 4 wedges; serve garnished with sour cream, red onion, jalapeño and/or green onions, if desired.
